Nancy’s Opens in London Bridge
The late-night cocktail bar, inspired by local culture and heritage, is set to bring high-glamour maximalism to the neighbourhood alongside its high-quality market-to-glass cocktail program.
Nancy’s opens its doors in the heart of the storied London Bridge neighbourhood. The bar, inspired by its local culture and heritage, is set to blend high-quality ‘market-to-glass’ cocktails with the rebellious soul of a glamorous 1970s party. The space effortlessly transitions from a convivial evening atmosphere, featuring a tableside ‘Lady Luck’ Negroni cart, into an energetic late-night spot hosted by regular DJs and live acoustic sessions.
Situated within an iconic 1973 Brutalist ‘egg-box’ style building, Nancy’s brings the era to life through vibrant, maximalist interiors. The space features plush banquette sofas and chromatic floor lamps, alongside a private tiger-print pool room, a disco-ball dance floor, and sweeping views of the city skyline.
Nancy’s debut menu concept, “market-to-glass”, takes inspiration from the SE1 area, in particular, Borough Market, and has been creatively led by award-winning bartender Martha May Markham and industry expert and Nancy’s general manager, Max Wolff. Martha, has recently won Pernod’s UK Bar Queens competition, been named IWSC’s emerging talent in bartending, and is Hennessy My Way’s UK champion. Max joins from his return from Grand Cayman’s award-winning Library By Sea, which won ‘Best Bar in the Caribbean’ at North America’s 50 Best Bars 2025.
At the menu’s heart sits Nancy’s ‘Lady Luck’ Negroni cart, presented tableside, to invite a sense of play; guests roll a die to choose from six distinct serves. These range from The Classic, made with Plymouth Gin, Campari and Mancini Sweet Vermouth and elevated by leather perfume, a nod to the area’s tanning heritage, to the decadent The Chocolate, a blend of Blanche d’Armagnac, Cocchi Torino, Bitter Rosso, Cacao Distillate and Mexican mole bitter, served with So Chocolicious’ Orange Chocolate Truffle, to The Rosé, made using Espadin mezcal, Boatyard Sloe Gin and a touch of Absinthe.
To further encourage exploration at the outset, the menu features three ‘Small Sip’ cocktails, allowing both novices and experts to enjoy riffs such as Corsica, a tart, Cachaça-based Clover Club twist made using raspberry and lemon cordial and Lillet Rose; Puebla, a vibrant, refined Tequila Sunrise, and Hourglass, a sharp yuzu Appletini made using Tanqueray, Lillet Blanc, lemon cordial, Manzana Verde and Yuzushu.
The broader cocktail program comprises ten signature cocktails, championing the people, place and local businesses. Highlights include: a super savoury Nancy’s Dirty Martini, made using a carefully curated brine blend from Borough Olives, Oloroso Sherry, Belvedere Vodka, and served with a ‘gilda’ style garnish; Queen’s Walk, inspired by blueberry pudding of the dessert shop, Humble Crumble, made using blueberry juice, malt syrup, Jameson Black Barrel whisky, vanilla and cinnamon, topped with a custard soft serve; a bright, zesty cocktail, Scatter Fall, a riff on the Airmail cocktail, made using the iconic lemon and lime marmalade from Jamaican condiment stall, Pimento Hill, Black Tot Finest Caribbean Rum, topped with Veuve Clicquot Champagne; an umami-forward iteration of the classic Sazerac cocktail, Nouvelle Vague that champions the famed Spice Mountain and is made using a spiced cherry syrup, seaweed-infused whisky and cognac; and Anko, an award-winning spiced sour by Martha May Markham, made using spiced carrot syrup, bell pepper juice, Gochujang distillate and Toki whisky.
