Originally from Yokohama, Japan, Michelin starred Chef Endo Kazutoshi centers his philosophy on precision, discipline and a deep respect for tradition, bringing a singular vision to everything he touches and Silent Harmony is no exception.
Silent Harmony was crafted with patience, precision and time as a 1991 single malt and matured fully for 34 years in a bourbon barrel. Triple-distilled, bottled at natural colour and non-chill filtered, the liquid retains the full integrity of the cask to present a complex and elegant finish. The single-cask release opens with a bright, expressive nose, featuring floral notes of honeysuckle, wild apple blossom, and chamomile, underpinned by fresh greenery and subtle coastal influence. The palate is structured and layered, delivering flavours of apricot tarte tatin, peach chutney, wild herbs, and a gentle bitterness from wormwood and gentian. The finish is long and composed, with lingering impressions of dried hay, herbal complexity, and a saline lift that speaks to its coastal character.
