Award-winning Restaurant Spinnaker Hosts Culinary Star Ana Roš  

As part of the themed gourmet dinner series “Spinnaker Gourmet Stage” at Valamar’s restaurant Spinnaker, located on the Poreč promenade, on Friday, October 27th, Chef Ana Roš, holder of three Michelin stars, will make a guest appearance. Hosting culinary stars like the renowned Slovenian chef contributes to the international recognition of Istria as a global gastronomic tourist destination.

In 2017, Ana Roš was declared the world’s best female chef by The World’s 50 Best Restaurants, and her restaurant Hiša Franko in Kobarid recently received its third Michelin star, making Ana Roš the first Slovenian female chef with three prestigious culinary stars. The restaurant is impressively ranked 32nd in the world’s best restaurants for 2023.

“Istra has always been close to my heart. I deeply love it and know it well. We own a small house in the heart of Istria, so I know well how special its land is and how quality the Istrian products are. Sometimes I feel they don’t get all the deserved attention and respect in local cuisines. Being in Poreč and taking over Spinnaker’s kitchen to present to the Istrian audience what we do in Hiša Franko is truly special. I am eagerly awaiting to see fellow chefs and friends among the guests. I want to show them that if there is a place where local ingredients can enrich a dish further, it is certainly Istria,” stated Ana Roš.

During the evening at Spinnaker, Roš will present a gastronomic mosaic of her current and future projects. The menu will include delicacies from Pekarna Ana, a glimpse of what visitors can expect in her new bistro JAZ in Ljubljana, and, of course, signature dishes from Hiša Franko that have already delighted a global audience. The dinner starts with focaccia from Pekarna Ana, followed by premium bruschetta from JAZ and culminates in a six-course meal that has made Hiša Franko recognizable on the global gastronomic scene. Ana Skrbinek from Hiša Franko, an expert in fermentation/mixology, will prepare a suitable welcome cocktail, and a sommelier will pair carefully selected wines. Fermented juices are also offered as a non-alcoholic alternative that provides a richness of taste comparable to the finest wines.
