Paulo de Tarso and Nicolas Jaouën reveal details on the menu and interiors of Italian venture Margot to open in Covent Garden this summer
One of London’s best loved Maître d’s, Paulo de Tarso, and fellow restaurateur, Nicolas Jaouën, are set to launch Margot this summer. Opening in Covent Garden, the restaurant will celebrate the glamour and charm of Italy through food, wine and design, with a special emphasis on the excellent service for which the pair are both known.
Appointed by Paulo and Nicolas to head up the kitchen is Maurizio Morelli, who recently left his role as chef patron at the popular Latium restaurant. Morelli is a chef with extensive experience in some of the world’s most prestigious Italian kitchens, such as The Hassler in Rome and Stefano Cavallini at The Halkin, as well as with a reputation as the master craftsman of pasta. Calling upon a rich childhood spent watching his mother make fresh pasta and immersed in Italian cooking, Morelli’s menu will bring diners an authentic taste of the various gastronomic regions and produce of his native country with a carefully curated selection of dishes executed with the chef’s light touch. Delicate, yet flavourful, dishes will include tagliolini with crab meat and purple aubergine and risotto “alla Milanese” with saffron and roast bone marrow as part of a menu that spans expertly sourced cured meats, carpaccio and tartare dishes, salads, pasta options and a range of meat and fish main courses. Reflecting the high level of service that is central to the concept of Margot, portion sizes will be adaptable to the particular needs and appetite of each diner to allow for a relaxed and flexible dining experience.
Designed by Fabled Studio, the 100 cover restaurant will feature a palette of deep blues and pale marble with copper accents. Margot will be at once welcoming and luxurious. The balance between the simple elegance and comfort of the interiors will mirror the emphasis on relaxation and ease that can be found in all aspects of the restaurant.
Having left behind roles at Bar Boulud and Le Petite Maison respectively, and with a wealth of industry experience behind them, the launch of Margot will see Paulo and Nicolas bring a restaurant with an emphasis on exquisite service to London’s dining scene this summer.
