Dan Doherty partners with rhubarb to open restaurant in New York

London’s premium hospitality group rhubarb has appointed award-winning chef and author Dan Doherty (previously of Duck and Waffle), as Chef Partner for its new all-day dining destination at New York’s Hudson Yards, opening March 2019.

The yet to be named restaurant, bar and terrace, will be located on the fifth floor of the newly developed 30 Hudson Yards on Manhattan’s West Side. This will be the first international location for the London hospitality group, that includes Sky Garden and the Royal Albert Hall amongst its portfolio.

Chef Partner Dan Doherty said, “I love New York & have always been a fan of the food scene there, so I was really excited when rhubarb approached me to work as Chef Partner on the Hudson Yards project. It’s an incredible site, and with an all-day offer, there’s something for everyone. I’ll continue to be based in London, but will be spending a lot of time in New York from pre-opening to launch and beyond. I can’t wait to get in the kitchen!”

Serving brunch to lunch and dinner, Dan’s ‘East meets West’ menus are inspired by his love of travel and will include; Singapore chilli crab croquettes; Scallop, apple, kohlrabi & Chinese chilli oil; Beef fillet, chilli, daikon & soy cured egg; Asparagus, sticky shitake, brown butter hollandaise and Roasted & glazed herb fed chicken with chicken fat rice.

Weekend brunch will see Asian twists on classics from an English breakfast bibimbap with fried rice, egg, smoked bacon and spiced sausage; to Korean pancakes, and black sesame waffles with smoked miso ice cream.

Designed by Robert Angell Design International, the 5,800 sq.ft, 171 cover space takes inspiration from its Hudson Yards location and the original majestic New York Penn Station building, but with Eastern influences. The restaurant and bar will be light, bright and grand in form; with natural textured materials, opulent tones, teak timber screens and oriental features, seamlessly blending industrial West with authentic East.

In 2020, rhubarb will also open a 10,000 sq.ft restaurant and events space at the top of 30 Hudson Yards. The venue will occupy the top two levels of the 1,296-foot-tall tower and include an expansive observation deck which will be the highest manmade outdoor viewing area in the Western Hemisphere, and the fifth highest in the world.
