NICOLAS ROUZAUD AND LIZ WEST COLLABORATE TO CREATE EDIBLE ART IN CELEBRATION OF FRIEZE LONDON COLOUR TEMPER
Nicolas Rouzaud, Chef Partner for The Connaught and head of The Connaught Patisserie, By Nicolas Rouzaud, has partnered with iconic British artist, Liz West, to create what can only be described as edible works of art in celebration of Frieze London (October 9 – 13, 2024 in The Regent’s Park). An aesthete with a passion for creating patisserie that engage and excite both the eyes and the taste buds, Rouzaud has worked closely with West to bring her love for optics, geometry, colour and playfulness to life.
Rouzaud is renowned for his talent for blending evocative, seasonal flavours and pushing the boundaries of the classics. West is globally famed for her use of a variety of materials and takes pleasure in exploring the use of light, blurring the boundaries between sculpture, architecture, design and painting to create works that are both playful and immersive. Together, the two have imagined their passions through the lens of gastronomy.
Both drawn to her work titled ‘Her Warm Reflection’ and inspired by the changing of the seasons, Rouzaud and West first agreed upon the use of this feminine yet autumnal colour palette. Working with this inspiration at the forefront, Rouzaud and West had a clear vision of the patisserie that they wanted to see on the counter in their minds.Both blessed with ‘hyperphantasia’ (commonly understood as one’s ability to explore the concept of imagination on extreme levels) the pair worked from this vision to bring the textures, flavours and aromas that they imagined to life ensuring that an element of surprise would run as a common thread throughout this culinary journey.
The result is: ‘Colour Temper’
A refined patisserie that celebrates the season’s rich flavours and textures. At its heart, you’ll find a decadent gluten-free chocolate sponge, offering a moist and tender base. This is layered with luxurious chocolate mousse, which adds a creamy, velvety richness that perfectly complements the sponge. The cake is adorned with an exquisite pear and blackcurrant crémeux, each bringing a burst of fruity sophistication. The blackberry jam adds a tangy-sweet contrast, enhancing the overall depth of flavour with every bite.
For added texture, Rouzaud included a delicate, crunchy chocolate feuillantine, which provides a satisfying crispness, and a crunchy almond layer for a delightful nutty finish. The ensemble is elegantly finished with a silky white chocolate glaze, adding a touch of sweetness and visual allure. Each Colour Temper offers a harmonious balance of rich chocolate, vibrant fruits, and satisfying crunch, making it a perfect indulgence for the season. Following the launch of this limited edition patisserie, Rouzaud and West will work together to develop a collaborative collection which will launch next year. This collection will be a continuation of their celebration and passion for geometric shapes, seasonal colours and light.
